Date truffles

So easy and so delicious.

You need:
Dark chocolate
Nut butter

Create your own double-boiler by heating pot in another, larger pot with water in it at low-medium heat.

Add chocolate chips

Cut dates on half and remove pits

When your chocolate is melted, use a teaspoon and pour it in to the date half.

You can also make nut-butter filled, chocolate-covered dates; split date lengthwise and remove pit

Add nut butter, I used almond

Put dates on parchment paper and then drizzle melted chocolate on top. You may need to lift the dates up to get the bottom.

Put in the fridge for an hour or longer, uncovered, then eat! I've made these with coconut butter as well and it tastes just like a chocolate covered marshmallow bar.

These are the dates I buy from Costco, they are THE best dates I've ever had.
