Paleo pumpkin pancakes 3 ways

This recipe, originally from DK Gets Fit, obviously used to be a lot more involved. But because of rushing, lack of ingredients, and forgetfulness, I've gotten it down to three items:

1) Pumpkin purée
2) Egg whites (or eggs - as I've said before, in recipes I use egg whites because I'd rather eat my whole eggs as they are)
3) Baking soda (and I've even forgotten to add this once and it still turned out all right)

To serve one:

Heat a tsp coconut oil in a personal-sized pan on medium.

Mix 1/2 cup pumpkin purée with 1/2 cup egg whites, and a 1/4 tsp baking soda.





Pour into pan.


Leave for about 5 minutes, when air bubbles start to appear:

It's time to flip - edge a spatula all the way around, get under it, and go. This can be messy. The trick is NOT to hesitate.


Leave for a few more minutes (3ish) and you're done!

 Way #1

Just like that. It's great for a post-workout snack. Sometimes, if I'm eating it plain, I add a big dash of cinnamon and a tsp of vanilla to the mixture before frying.



Way #2

In lieu of toast. Top with sautéed veggies and an egg or two.



Way #3

As a sweet treat. Top with coconut cream, almond butter, honey, berries, banana, maple syrup - whatever floats your boat. And still a completely acceptable breakfast item.
